Vinification
In 2024, after a rigorous selection process, the grapes were vatted by gravity in truncated-cone vats made of wood, concrete and stainless steel. Fermentations, carried out plot by plot with specific yeasts adapted to each grape variety and terroir, were carefully controlled to preserve the authenticity of the vintage and faithfully reflect the terroir of Château La Tour Carnet. Extractions were precise and controlled, favoring the freshness of the fruit and the softness of the tannins. Each batch was tasted daily during vinification to adjust extraction and run-off protocols. Ageing in 60% French oak barrels (1/2 new and 1/2 single-vineyard) helped to refine the structure and fully express the complexity of the vintage, while the remaining 40% in a variety of containers was determined by the characteristics of the wine.
