Vinification
After careful sorting, the grapes are vatted by gravity in truncated cone-shaped vats made of wood, cement and stainless steel. Fermentation is carried out using indigenous yeasts to preserve the authenticity of the vintage and reflect the terroir of Château Pape Clément as faithfully as possible. Extractions are precise and controlled, favouring the freshness of the fruit and the velvety tannins. All batches are tasted daily during vinification to determine the extraction and run-off programme. Part of the malolactic fermentation takes place in barrels, providing a subtle integration of wood. Ageing in French oak barrels, 50% of which are new, will further refine the structure and allow the full complexity of the vintage to be expressed.
Maturing / Ageing : 14 months: 70% in barrels (2/3 new oak) - 15% in tuns - 15% in various containers (sandstone, concrete, stainless steel)

Owner's words
Châetau Pape Clément red is wrapped in folds of dark purple, displaying beautiful depth and brilliance. On the nose, it is bright and expressive, revealing intense and complex aromas of red fruits, violet and blackcurrant jelly. Notes of liquorice and subtle hints of forest floor emerge as it opens up. The palate is flavourful and elegantly restrained, with delicate hints of spice and smokiness. The beautiful balance and finesse of this wine are what make it truly remarkable.
