Vinification
Manual sorting of berries then densimetric on tribaie. Vinification in stainless steel vats and thermo-regulated wood, manual pigeage, remontages, maceration of about three weeks. Malolactic fermentation in barrels.
Maturing/ageing: 18 to 22 months - 100% new wood
Tasting commentary
Intense red almost black colour. The nose is still subtle and reserved, but is becoming increasingly complex, revealing black fruit, floral notes and a hint of menthol. The palate is delicious and stretches endlessly. Everything is there: freshness, crisp blueberry, black cherry and blackcurrant fruit, taffeta tannins and peppery spices.
