Vinification
Vinification in concrete vats, wood and stainless steel filled by gravity without pumping. Full-scale vinification in barrels. Cold pre-fermentation macerations, alcoholic fermentation under natural yeasts, practice of pigeage, vinification without sulfites
Maturing/ageing : 16 months in French oak barrels of which 50% new wood
Tasting commentary
Beautiful deep and bright with violet reflections. A complex nose nuanced with notes of violet, blackcurrant, blackberry and wood mara. After a light aeration, the bouquet reveals fresh floral notes, spices, cut herbs and white pepper to which smoky touches of liquorice and espresso give texture and depth. A persistent length in mouth ends the tasting on a finish of spice box and roasted mulberries.
