Vinification
 - Organic protection - harvest entry and SO2-free vinification - 72-hour skin contact maceration for Sauvignon gris + Sauvignon blanc - Pressing then cold settling for 24 hours around 6°. - Cold stabilization at around 6° for 6 to 10 days on fine lees. - Traditional alcoholic fermentation: 15% of the volume is vinified in new barrels (Sauvignon gris) and the balance in stainless steel tanks.
Maturing/ageing : Aged in barrels for 7-8 months. The remainder in stainless steel vats. - Regular stirring of the lees.
Tasting commentary
 Crystal-clear, pale yellow with green highlights. Complex nose with notes of jasmine, violet, aloe vera and white peach, in a precise, elegant floral tone. The palate is fleshy, saline and slatey. This charming wine offers excellent balance and length.
