Vinification
Stainless steel vats from 12hl to 120hl to optimize the plot by plot selection. Fermentations : temperatures from 26 to 28°c 2 to 3 pumping-over a day. Malolactic fermentations in barrels and stainless-steel vats.
Maturing/ageing : 12 months in 50% of new Franch oak barrel.
