Gravity filling of whole berries after optical and manual sorting, gentle destemming (Dream), vinification at 28°C in small wooden conical vats, extraction carried out by manual punch-downs, vertical pressing.​

Owner's words
The nose is very expressive, with fine notes of red and black fruit, a lovely blend of morello cherry, blueberry and blackcurrant. After swirling, a spicy dimension predominates with notes of clove, liquorice and eucalyptus, followed by darker, empire notes of graphite, pencil lead and charcoal. A superb aromatic complexity, with a strong “Sols de Graves” character. The attack on the palate is frank and direct, with good density and a superb texture. The wine is full and dense with a fine balance of freshness. The tannic structure is well matured with a very fine texture, a lovely mouthfeel and a velvety feel.
