Vinification
Plot by plot and intra plot vinification. 102 thermo-regulated stainless steel vats for 103 vine plots. Traditional vinification at 26-28 °C during 18 to 25 days. Moderate pumping-over every day, or pigeage or delestage. Malo lactic fermentation through co inoculation

Owner's words
Blending began on 3rd January and was completed on 10th January 2024. The Merlots, at 16% of the blend, were ripe and complex, but the Cabernet Sauvignons, which had everything that we look for when making a Grand Vin, dominated at 84% of the blend. Particularly notable were the predominant aromas of fresh fruit such as blackcurrant, morello cherry, and liquorice.  The press wines, which are essential to making a Grand Vin, were sumptuous, and give the wine a third dimension that will carry it effortlessly through the ages. Strict selection, which resulted in only 42% of Grand Vin being produced, has allowed us to guarantee irreproachable quality in this vintage that celebrates 40 years in the benevolent care of our Japanese owner.
