Vinification
 Gradual, gentle extraction of the juice, adapted to each sort and plot. Light cold settling, followed by alcoholic fermentation in stainless steel tanks. During fermentation, the must is gravity-fed into new and one-wine French oak barrels (cellar temperature maintained between 18°C and 20°C).
Maturing/ageing : 12 to 18 months, in new, one-wine French oak barrels.
