Vinification
Whole-bunch fermentation by gravity and plot-by-plot vinification in concrete vats. Reductive ageing on fine lees: first racking after 6 to 10 months of ageing, the second a year later, before bottling. Fining and filtration only if necessary.
Maturing / Ageing 16 to 20 months in oak barrels (40% new oak)
