Vinification
Selection by vineyard block and within blocks. 102 temperature-controlled stainless steel tanks for 103 vineyard blocks. Batches classified by grape variety, vine age, terroir, and grape ripeness. Fermentation at 26–28 °C for 18 to 25 days. Moderate daily pumping over, or délestage, or pigeage. Malolactic fermentation via co-inoculation.
Maturing/ageing 21 months, 50% new oak barrels

Owner's words
Cabernet Sauvignon, despite yields more significantly affected by the drought, accounts for 77% of the blend. It brings density, freshness and length to the wine’s structure. The 18% merlot softens the attack and enriches the mid-palate, while petit verdot ensures overall cohesion and depth. The nose reveals intense aromas of black cherry, morello cherry and blackberry, subtly enhanced by a touch of graphite. The palate is ample and structured, with finely chiselled tannins reflecting perfectly controlled concentration and remarkable persistence. An elegant and precise vintage.
