Elevage
Organic winemaking methods tailored to each concrete tank: 9 tanks of Merlot (50, 80, and 105 hl), 8 tanks of Cabernet Sauvignon, 1 tank of Petit Verdot, and 1 tank of Cabernet Franc. The harvest is inoculated with selected indigenous yeasts and lactic acid bacteria (early co-inoculation). Fermentation lasts an average of 10 to 14 days. Two smart sprinklers and the Air’Pulse are used for pumping over to optimize extraction from the pomace and the quality of the tannins: from 2 volumes per day at the start of fermentation to ¼ volume per day at 1000 on each tank, depending on daily tastings. Total vatting time of 19 to 23 days. Vertical pressing only.
12 months: 35% new barrels, 45% one-use barrels, 20% amphorae. Fined with egg whites after blending.

Owner's words
 
The mild and dry winter led to an early budbreak for the 2025 vintage at the end of March. Heavy rains over the Easter weekend, followed by a very hot and dry spell, triggered uniform and early flowering in late May. The scorching summer heat caused severe water stress, with veraison occurring in late July. Saving rains in late August accelerated the ripening of the grapes, resulting in a modest but exceptionally high-quality harvest. Château Fourcas Hosten 2025 offers dense tannins and a long finish, thanks to the Cabernet Sauvignon grapes grown on gravelly soils. The Merlot grapes from the clay-limestone terroir contribute aromatic intensity of red and black fruits, a full-bodied palate, and a lovely freshness on the finish.
