Vinification
52 temperature-controlled concrete vats of 75, 120 and 155 hl. In 2025: The grapes, harvested relatively early, are strikingly vibrant: small, rich in sugar, colour and aromas. In the winery, we continue to work delicately: gentle extraction; once the density reaches 1020, no further mechanical extraction is carried out, but slow maceration at low temperatures is used to bring out the wine’s character without harshness.
12 to 14 months in French oak barrels, comprising 30% new oak and 70% barrels that have previously held one vintage.
