Vinification
Use of a gravity-fed winery. Sulfite-free winemaking; in wooden vats with double transparent staves, which allowed us to rethink our pumping-over method to avoid pumping the wine and optimize maceration.
Maturation/aging: Aged in 50% new barrels, 40% one-use barrels, and 10% amphorae

Owner's words
An intense colour with deep highlights and a slightly glycerine-like texture that promises a lovely richness. The initial nose is immediately expressive and charming, dominated by delicate floral notes of roses and violets, quickly complemented by hints of fresh red berries. With aeration, the bouquet gains depth with toasty and chocolatey notes, enhanced by a subtle hint of grey pepper and a minty freshness. On the palate, the attack is full-bodied, indulgent and creamy, carried by a generous and perfec-tly structured body. The tannic structure, both refined and pronounced, offers a crunchy texture. The wine is structured, modern and harmonious, with vibrant fruit that preserves all its freshness. The finish, persistent and flavourful, is supported by beautiful sweetness and elegant tannins that suggest excellent ageing potential.
